I came to stones from professional kitchens, where the luxury always hid in the poetic detail most people skipped. Fifteen years on, kasumi still asks more patience of me than anything — and what I've chased, all along, is control: knowing exactly how I reached a finish, and being able to reach it again.

To my grandfather Arsène, who ran a small metal-cutting factory he called l'atelier, in Courbevoie near Paris, from the sixties to the eighties. And so here I am, papi!
